how to reconstitute dried porcini mushrooms
Place the recipe’s required amount of dried porcini mushrooms in a bowl and pour just enough warm water to cover them.
Let them reconstitute for 15 minutes. Squeeze them well in batches with your hands.
Remove as much of the water as you can. The porcini should look like this.
Chop them.
Until they look like this.
Consider saving the reserved liquid in which the porcini have been soaking. It adds the most wonderful extra boost of flavor to risottos, pasta sauces, and braises.
Just strain it through a small, fine sieve colander set over a measuring cup. I also used a little piece of paper towel as well, just to be sure to eliminate any fine, fine grit.
